I had one of the most disappointing dining experiences here. From the start, the waiter approached us and casually said ?bread, olives? ? no mention of cost ? which gave the clear impression it was a complimentary welcome gesture. I agreed, only to later find out they charged for five people for these items without ever explaining that they were not free.
When ordering, I asked for water only and was met with brusque, unfriendly service. Any questions I had about the menu were met with impatience. The food itself was mediocre at best, and the prices were shockingly high compared to far better restaurants in Brighton.
When the bill arrived and I challenged the extra charges, the manager (who I believe is the owner) dismissively pointed to the menu. To make matters worse, another waitress jumped into the conversation with the absurd comment that ?everything in the UK is expensive? ? as if that justified misleading customers.
This kind of practice feels deliberately deceptive. I told the manager to stop pulling tricks like this, but judging by his reaction, I doubt anything will change.

Small, fine Spanish restaurant with a large selection of super tasty tapas! The food was excellent and the service very friendly and courteous! We felt completely at ease and will be back! Highly recommendable!

A truly lovely restaurant. Fabulous staff and owner, welcoming, friendly and attentive. It's a Tapas restaurant and the choices are excellent.
Well done to the team at Don Carlos!

Mussels were gritty and food was bland.

Short tempered and rude. OK, I expected Langoustine= Norway Lobster= Cigalas while their menu says Langostinos= large prawn. So it was my misunderstanding. Yet, they failed to explain nicely. Instead, they repeated 4 times'' You want this or not!'' with removing the plate from us. I was just trying to get a clarification that the ''Prawn'' they served was £15 Langostinos because they did have ''Grilled Prawns'' £8 on the menu, too.

The food was outstanding ? the best Spanish food I?ve ever had outside of Spain. A few dishes stood out in particular and were bursting with authentic flavor. The service was excellent and very friendly, and the charming, lively atmosphere made the whole experience even better. For me, Casa Don Carlos is an absolute must when I?m in Brighton!

The best tapas in Brighton! The man who looked after us was absolutely delightful and made my friend?s birthday dinner a very special occasion.

Food was not good, bland and had no seasoning. Chorizo was tasty and the only nice dish, but that has seasoned itself over time. Most of it DEFINITELY microwaved, the mussels were gritty and the sauce was bland and potatoes were dry. The chicken in the paella was super dry as well, I had to leave most of it and I love mussels! This was a shame as we?ve heard good things about this restaurant. Our bill came to £90 for 2 people & was just really not worth the money.

Most disappointing tapas restaurant we have ever been to!
Food absolutely horrid, non of it home made, packet food at best that had been microwaved or warmed up in a pan.
My wife had tortia

Don?t recommend. Overpriced. I had paella - mussels were small and gritty and chicken was really dry. As was the tortilla. This is a Brighton institution but there?s dozens of other restaurants where value and quality of food are way better. Service is brusque.
